ROASTED SEA BREAM PROVENÇAL STYLE

Ingredients

  • 4 to 8 fillets of grey or royal sea bream
  • 120 ml (8 tbsp) olive oil
  • 1 onion, chopped
  • 500 ml (2 cups) green beans
  • 250 ml (1 cup) black olives
  • 15 ml (1 tbsp) mixed herbs from Provence
  • 2 cloves of garlic, chopped
  • 125 ml (½ cup) white wine
  • 60 ml (4 tbsp) lemon juice
  • Salt and pepper to taste

Preparation

  1. In a hot pan, brown the sea bream fillets in olive oil for 2 minutes on each side. Season with salt and pepper and set aside on a plate.
  2. In the same pan, sauté the onion.
  3. Add the beans, olives, herbs from Provence and garlic, deglaze with white wine and cook for 5 minutes over medium heat. Check the seasoning.
  4. In the pan, on the vegetables, arrange the sea bream fillets, sprinkle with lemon juice and cook for another 5 minutes.
