Ingredients
- 4 to 8 fillets of grey or royal sea bream
- 120 ml (8 tbsp) olive oil
- 1 onion, chopped
- 500 ml (2 cups) green beans
- 250 ml (1 cup) black olives
- 15 ml (1 tbsp) mixed herbs from Provence
- 2 cloves of garlic, chopped
- 125 ml (½ cup) white wine
- 60 ml (4 tbsp) lemon juice
- Salt and pepper to taste
Preparation
- In a hot pan, brown the sea bream fillets in olive oil for 2 minutes on each side. Season with salt and pepper and set aside on a plate.
- In the same pan, sauté the onion.
- Add the beans, olives, herbs from Provence and garlic, deglaze with white wine and cook for 5 minutes over medium heat. Check the seasoning.
- In the pan, on the vegetables, arrange the sea bream fillets, sprinkle with lemon juice and cook for another 5 minutes.
