Beef borschette with peanut sauce

BEEF SKEWER WITH PEANUT SAUCE

Portions : 4 - Preparation : 20 minutes - Cooking : 10 minutes

Ingredients

The beef skewer

  • 400 g (13 1/2 oz) beef cubes, cut from the tenderloin
  • 5 ml (1 tsp.) soy sauce
  • 5 ml (1 tsp.) chili flakes
  • 5 ml (1 tsp.) ground cumin
  • 5 ml (1 tsp.) sugar
  • 2 red onions, quartered
  • 2 red peppers, coarsely chopped
  • Pepper to taste

Peanut sauce

  • 250 ml (1 cup) peanut butter
  • 250 ml (1 cup) coconut milk
  • 60 ml (4 tbsp.) hoisin sauce
  • 30 ml (2 tbsp) rice vinegar
  • 1 lime, juice
  • salt and pepper to taste
  • 5 ml (1 tsp.) hot pepper paste (optional)

Preparation

  1. Preheat BBQ to maximum.
  2. In a bowl, toss meat cubes with soy sauce, chili flakes, cumin and sugar to coat well.
  3. On skewers, skewer the meat, alternating with pieces of onion and bell pepper.
  4. Place the skewers on the BBQ grill and brown for 2 minutes per side.
  5. Then turn off the heat under the meat and close the lid. Cook for 4 to 8 minutes, depending on the desired doneness and the size of the meat cubes.
  6. Meanwhile, in a bowl, using a hand blender, blend the peanut butter, coconut milk, hoisin sauce, rice vinegar and lemon juice until smooth.
  7. Add chili paste to taste, check seasoning and chill.
  8. Serve the peanut sauce as a side dish.
