PORK KEBABS

Portions :- Preparation : 10 minutes - Marinade : 5 minutes to 4 hours- Cooking : 8 to 11 minutes

Ingredients

  • 1 pork tenderloin, cubed
  • 30 ml (2 tablespoons) ketchup
  • 2 garlic cloves, minced
  • 30 ml (2 tbsp.) Worcestershire sauce
  • 15 ml (1 tbsp.) strong mustard
  • 15 ml (1 tbsp.) honey
  • 12 cubes fresh pineapple
  • 1 red onion, quartered
  • 1 red bell pepper, cut into large chunks
  • 4 slices bacon, cut into 4
  • 2 lemons, halved
  • Salt and pepper to taste

Topping

  • 500 ml (2 cups) wheat semolina
  • 30 ml (2 tablespoons) butter
  • 500 ml (2 cups) boiling water
  • Salt and pepper to taste

Preparation

  1. Preheat barbecue or grill pan.
  2. In a bowl, combine ketchup, garlic, English sauce, mustard, honey, salt and pepper.
  3. Add meat and marinate for 5 minutes to 4 hours, depending on available time.
  4. Place meat cubes, pineapple cubes, onion, bell pepper and bacon on skewers.
  5. Grill skewers for 4 minutes on each side.
  6. Grill the lemon halves on the flesh side for 2-3 minutes.
  7. In a bowl containing the semolina, add the butter, a little salt and the boiling water, stir, then cover and leave to rest for 5 minutes.
  8. Using a fork, scrape the semolina to break up any lumps.
  9. Divide the semolina between the plates and place the skewers and grilled lemons on top.
