PORK KEBABS
Portions :- Preparation : 10 minutes - Marinade : 5 minutes to 4 hours- Cooking : 8 to 11 minutes
Ingredients
- 1 pork tenderloin, cubed
- 30 ml (2 tablespoons) ketchup
- 2 garlic cloves, minced
- 30 ml (2 tbsp.) Worcestershire sauce
- 15 ml (1 tbsp.) strong mustard
- 15 ml (1 tbsp.) honey
- 12 cubes fresh pineapple
- 1 red onion, quartered
- 1 red bell pepper, cut into large chunks
- 4 slices bacon, cut into 4
- 2 lemons, halved
- Salt and pepper to taste
Topping
- 500 ml (2 cups) wheat semolina
- 30 ml (2 tablespoons) butter
- 500 ml (2 cups) boiling water
- Salt and pepper to taste
Preparation
- Preheat barbecue or grill pan.
- In a bowl, combine ketchup, garlic, English sauce, mustard, honey, salt and pepper.
- Add meat and marinate for 5 minutes to 4 hours, depending on available time.
- Place meat cubes, pineapple cubes, onion, bell pepper and bacon on skewers.
- Grill skewers for 4 minutes on each side.
- Grill the lemon halves on the flesh side for 2-3 minutes.
- In a bowl containing the semolina, add the butter, a little salt and the boiling water, stir, then cover and leave to rest for 5 minutes.
- Using a fork, scrape the semolina to break up any lumps.
- Divide the semolina between the plates and place the skewers and grilled lemons on top.
