RACK OF PORK IN A MUSTARD AND SPICE CRUST

INGREDIENTS
- 2 tbsp each Coriander, mustard and fennel seeds: 30 ml
- 1 tbsp Cracked pepper: 15 ml
- Salt: to taste
- 1 tbsp each Oil and butter: 15 ml
- 1, 2 lb Québec Pork Rack: 1, 900 g
- 1/3 cup Dijon mustard: 80 ml
- 2 Cloves garlic, finely chopped
- 1 tbsp Lemon zest: 15 ml
- 2 tbsp Fresh chives, chopped: 30 ml
PREPARATION
- In a large ovenproof skillet, heat spices over medium heat to enhance flavor. Let cool on a plate. Coarsely grind in a mortar or mash with a heavy-bottomed pan and add pepper and salt.
- In the same pan, heat the oil and melt the butter to sear the rack of pork on all sides. Place the rack of pork in the pan, bones down.
- Mix mustard with garlic, lemon zest, chives and spice blend. Spread mustard over top of rack.
- Bake at 160°C (325°F) for 40 to 60 minutes, or until thermometer reads 68°C (155°F). Remove rack from oven, cover and let stand 15 min before cutting between ribs to serve.
