Ingredients
- 4 pork chops
- 45 ml (3 tablespoons) hot mustard
- 30 ml (2 tbsp.) soy sauce
- 8 shallots, halved
- 2-3 apples, peeled and cut into 8 pieces
- 60 ml (4 tbsp.) butter
- 1 sprig thyme
- 2 garlic cloves, chopped
- 125 ml (1/2 cup) apple cider or apple juice
- 90 ml (6 tbsp) chives, snipped
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- In a bowl, combine mustard and soy sauce, coat pork chops and marinate for a few minutes.
- Meanwhile, in a hot skillet, sear the shallots and apples in a little melted butter.
- Add the sprig of thyme, garlic and cider, and reduce the liquid over high heat for 4 to 5 minutes, while coating the apples and shallots with the liquid. Check seasoning.
- Leave in the oven for 30 minutes, or until golden and melting.
- Meanwhile, in a very hot, ridged frying pan, sear the chops for 2 minutes on each side.
- Place the apple and shallot mixture on each plate, with the meat on one side and the chives on top.
