Ingredients
- 680 g mashed potatoes (sous vide)
- 2 eggs
- 125 ml (1/2 cup) grated parmesan
- 125 ml (1/2 cup) breadcrumbs
- 60 ml (1/4 cup) flour
- Salt and pepper to taste
- 2 cups panko breadcrumbs (for rolling croquettes)
- Oil for frying (about 2 to 3 tbsp.)
Flavor options
Option 1: Garlic, paprika and chopped ham
- 2 cloves garlic, minced
- 1 tsp. paprika
- 100 g chopped ham
Option 2: Bacon and cheddar
- 100 g bacon, cooked and crispy, chopped
- 125 ml (1/2 cup) grated cheddar
Option 3: Jalapeños and feta
- 1 jalapeño, finely chopped
- 125 ml (1/2 cup) crumbled feta
Preparation
- Heat the mashed potatoes in their vacuum bag by plunging them into boiling water for about 5 minutes. Once hot, pour the mash into a bowl.
- Add the eggs, grated parmesan, flour and breadcrumbs to the mashed potatoes. Season with salt and pepper to taste. Mix well until smooth.
Customize with flavors
Choose one of the flavor options:
- Option 1: Add the minced garlic, paprika and chopped ham to the mixture.
- Option 2: Add crispy bacon and shredded cheddar to the mixture.
- Option 3: Add chopped jalapeño and crumbled feta to the mixture.
- Mix your chosen topping into the mash mixture.
- Shape the potato dough into small balls or patties.
- Roll each croquette in the panko breadcrumbs to coat well.
- In a skillet, heat the oil over medium heat. Brown the croquettes on each side for about 3 to 4 minutes, until golden brown and crispy.
- Drain on paper towels and serve hot.
