PORK CUTLETS WITH MUSTARD SAUCE

INGREDIENTS
- 2 tbsp Butter 30 ml
- 1 lb Québec Pork cutlets, 6 mm (1/4 in.) thick 500 g
- Salt and freshly ground pepper to taste
- 1 tbsp Finely chopped dry shallots (or 6 green onions) 15 ml
- 1/4 cup Chicken broth 50 ml
- 3/4 cup 35% M.F. cream 200 ml
- 2 tbsp Dijon mustard 30 ml
- 2 tbsp Chopped fresh parsley 30 ml
PREPARATION
- Melt half the butter in a large non-stick skillet and sauté half the cutlets over medium heat for 1 to 2 min. on each side. Season to taste. Set the cutlets aside on a plate and cover. Repeat with remaining butter and cutlets.
- In the same skillet, sauté shallots or green onions; add chicken broth, cream and Dijon mustard. Reduce until sauce is smooth. Adjust seasoning.
- Return cutlets to sauce and reheat for 2 to 3 min. Add parsley.
SERVING SUGGESTION
Serve with mashed potatoes and mixed vegetables.
