Ingredients
Fajita spice blend
- 15 ml (1 tablespoon) cumin seeds, ground
- 15 ml (1 tbsp.) sweet smoked paprika
- 15 ml (1 tbsp.) sugar
- 15 ml (1 tbsp.) chili powder
- 5 ml (1 tsp.) garlic powder
- 3 Québec chicken breasts, in strips
- 60 ml (4 tbsp) olive oil
- 500 ml (2 cups) onion, minced
- 500 ml (2 cups) red bell pepper, in strips
- 5 garlic cloves, chopped
- 500 ml (2 cups) corn kernels
- 30 ml (2 tbsp.) butter
- 500 ml (2 cups) chopped lettuce
- 125 ml (½ cup) pickled peppers (Jalapenos, banana peppers, etc.)
- Qs Wheat or corn tortillas
- 125 ml (½ cup) coriander leaves, chopped
- 125 ml (½ cup) sour cream
- 4 portions cooked rice
- Salt and pepper to taste
Preparation
- For the farita spices, in a bowl, combine the cumin, paprika, sugar, chili powder and garlic powder. Set aside.
- In a hot skillet, brown chicken in olive oil for 2 minutes on each side. Add 30 ml (2 tbsp.) of the prepared spice blend and season with salt and pepper. Check seasoning. Remove and set aside.
- In the same hot pan, sauté the onion and bell pepper for 2 minutes.
- Add garlic and remaining spice mix. Check seasoning.
- In a bowl, mix the corn and butter and reheat in the microwave for 1 minute.
- In a large serving dish, arrange the warm tortillas in the center and around them, each of the components, corn, rice, bell pepper and onion mixture, prepared chicken, and let everyone prepare their own fajitas.
