INGREDIENTS
Caramelized bananas
- 2 bananas, thickly sliced
- 80ml (1/3 cup) sugar
- 15ml (1 tablespoon) unsalted butter
- 45ml (3 tablespoons) 35% cream
- 1/2 orange for zest
- 1ml (1/4 tsp.) salt
Pastry
- 125ml (1/2 cup) mashed ripe bananas (approx. 2 bananas)
- 125ml (1/2 cup) brown sugar
- 1 egg
- 15ml (1 tablespoon) vanilla
- 1ml (1/4 teaspoon) salt
- 80ml (1/3 cup) unsalted melted butter
- 125ml (1/2 cup) flour
- 5ml baking powder
- 60ml (1/4 cup) white chocolate chips
Preparation
- In a saucepan over medium heat, melt the butter, then add the sugar and stir until the mixture becomes a golden caramel.
- Remove from the heat and gently stir in the cream, orange zest and salt.
- Butter a round or rectangular cake tin and line with parchment paper.
- Arrange the banana slices in the bottom of the tin, then pour the caramel evenly over the bananas.
- In a bowl, combine mashed bananas, brown sugar, egg, vanilla, salt and melted butter.
- Stir in flour and baking powder until smooth.
- Add the chocolate chips and mix gently.
- Pour the batter evenly over the caramelized bananas in the baking tin.
- Bake for 45 minutes, until the tip of a knife inserted in the center of the cake comes out clean.
- Let cool slightly.
- Carefully turn the cake upside down onto a serving plate. Serve warm or at room temperature, on its own or with a scoop of vanilla ice cream.
