Ingredients
- 454 g (1 lb) Québec chicken, ground
- 60 ml (4 tablespoons) breadcrumbs
- 60 ml (4 tbsp.) mint leaves, chopped
- 10 ml (2 tsp.) oregano
- 1 garlic clove, chopped
- 15 ml (1 tbsp.) ground coriander seeds
- 60 ml (4 tbsp.) green olives, finely chopped
- 10 ml (2 tsp.) zaatar
- 1 lemon, zested
- 1 shallot, finely chopped
- 4 portions cooked white rice
- Salt and pepper to taste
Sauce
- 60 ml (4 tbsp.) tahini
- 2 lemons, juice
- 60 ml (4 tbsp.) mayonnaise
- 15 ml (1 tbsp.) honey
- salt and pepper to taste
Preparation
- Preheat barbecue to high.
- In a bowl, combine meat, breadcrumbs, mint, oregano, garlic, coriander, olives, zaatar, lemon zest, shallot, salt and pepper.
- Using wooden or metal skewers, form sausages from the prepared mixture.
- Place the skewers on the barbecue grill and cook for 2-3 minutes on each side.
- Meanwhile, in a bowl, combine the tahini, lemon juice, mayonnaise, honey, salt and pepper. Check seasoning.
- Serve keftas with prepared sauce and white rice.
