Chicken kefta with tahini mayonnaise

Ingredients

  • 454 g (1 lb) Québec chicken, ground
  • 60 ml (4 tablespoons) breadcrumbs
  • 60 ml (4 tbsp.) mint leaves, chopped
  • 10 ml (2 tsp.) oregano
  • 1 garlic clove, chopped
  • 15 ml (1 tbsp.) ground coriander seeds
  • 60 ml (4 tbsp.) green olives, finely chopped
  • 10 ml (2 tsp.) zaatar
  • 1 lemon, zested
  • 1 shallot, finely chopped
  • 4 portions cooked white rice
  • Salt and pepper to taste

Sauce

  • 60 ml (4 tbsp.) tahini
  • 2 lemons, juice
  • 60 ml (4 tbsp.) mayonnaise
  • 15 ml (1 tbsp.) honey
  • salt and pepper to taste

Preparation

  1. Preheat barbecue to high.
  2. In a bowl, combine meat, breadcrumbs, mint, oregano, garlic, coriander, olives, zaatar, lemon zest, shallot, salt and pepper.
  3. Using wooden or metal skewers, form sausages from the prepared mixture.
  4. Place the skewers on the barbecue grill and cook for 2-3 minutes on each side.
  5. Meanwhile, in a bowl, combine the tahini, lemon juice, mayonnaise, honey, salt and pepper. Check seasoning.
  6. Serve keftas with prepared sauce and white rice.
