SIMMERED PORK WITH MUSTARD AND PEARS
Portions : 4 - Preparation : 10 minutes - Cooking time : 55 to 60 minutes
Ingredients
- 1 tbsp Canola oil : 15 ml
- 1 lb Québec Pork stewing cubes (shoulder): 500 g
- 3 Leeks, chopped
- 2 tbsp Old-fashioned mustard: 30 ml
- 1/2 cup 15% country-style cream: 125 ml
- 1 tbsp Cornstarch (mixed with cream): 15 ml
- 2 pears, cored and cubed
- Salt and freshly ground pepper: to taste
- 2 tbsp Chopped fresh tarragon or 1 tbsp dried tarragon (15 ml) : 30 ml
- 1 1/2 cups poultry or vegetable stock: 325 ml
PREPARATION
- Heat the oil in a heavy-bottomed to medium-high saucepan and lightly brown the pork and leeks.
- Add broth and mustard and bring to a boil.
- Cover and reduce heat to medium-low.
- Simmer for 45 min.
- Stir in cream/starch mixture, pears and tarragon.
- Simmer for 5 min over low heat, then season to taste.
SERVING SUGGESTION
Serve with stewed green beans and a country loaf. Serve with green peas sautéed with onion.
