MEDITERRANEAN-STYLE MEATLOAF

INGREDIENTS
- 2.2 lb Lean ground Québec Pork 1 kg
- 1 Onion, chopped
- 1 cup Breadcrumbs or 2 slices whole-wheat bread, crumbled : 250 ml
- 1 Egg, beaten
- 1/2 cup Store-bought sun-dried tomato vinaigrette: 125 ml
- 1/2 cup Sliced black or green olives: 125 ml
- 1/2 cup diced provolone or mozzarella cheese: 125 ml
- Salt and freshly ground pepper: to taste
PREPARATION
- Preheat oven to 190°C (375°F). Cut a rectangle of parchment paper and line the bottom and sides of a loaf pan.
- Mix all ingredients and season generously.
- Press the mixture into the loaf tin and bake uncovered for 1 hour.
- Let stand 15 minutes before slicing and serve with rice and seasonal vegetables.
VARIATION
This pork preparation can be cooked in small balls or in patties for burgers.
