Creamy shrimp and zucchini pasta

CREAMY SHRIMP AND ZUCCHINI P TES

Portions : 4 - Preparation : 10 minutes - Cooking : 10 minutes

Ingredients

  • 4 portions spaghetti
  • 2 zucchini, cubed
  • 1 clove garlic, minced
  • 15 ml (1 tablespoon) tomato paste
  • 60 ml (4 tbsp.) olive oil
  • 24 shelled shrimp 31/40
  • 125 ml (1/2 cup) 35% cream
  • 60 ml (4 tbsp.) capers
  • 8 basil leaves, chopped
  • 60 ml (4 tbsp) grated Parmesan cheese
  • salt and pepper to taste

Preparation

  1. In a pot of boiling, salted water, cook pasta according to manufacturer's instructions.
  2. Meanwhile, in a hot skillet, sauté zucchini cubes, garlic and tomato paste in olive oil for 2 minutes. Add the shrimps and cook for a further 2 minutes.
  3. Add the cream, capers, salt and pepper and mix. Check seasoning.
  4. Add the pasta and basil to the pan and toss.
  5. Sprinkle with Parmesan cheese before serving.
