HONEY AND MUSTARD GLAZED CHICKEN BREAST
Portions : 2 - Preparation : 5 minutes - Cooking : 15 minutes
Ingredients
- 2 Québec chicken breasts
- 60 ml (4 tablespoons) olive oil
- 1 sprig rosemary
- ½ lemon, juice
- 60 ml (4 tbsp.) strong Dijon mustard
- 60 ml (4 tbsp.) honey
- 1 clove garlic, minced
- Salt and pepper to taste
Optional
- 125 ml (1/2 cup) 35% cooking cream
- 1 pinch dried tarragon
Preparation
- Season chicken breasts.
- In a hot frying pan, sear the chicken breasts in a little olive oil for 2 minutes on each side with the rosemary sprig.
- Then, over medium heat, cook for a further 2 minutes.
- In a bowl, mix the remaining olive oil, lemon juice, mustard, honey and garlic.
- Pour the mixture over the chicken breasts and cook for a further 5 minutes, turning occasionally. Check seasoning.
- Optional: Add cream and tarragon to the prepared mixture for a creamy finish.
