Honey and mustard glazed chicken breast

HONEY AND MUSTARD GLAZED CHICKEN BREAST

Portions : 2 - Preparation : 5 minutes - Cooking : 15 minutes

Ingredients

  • 2 Québec chicken breasts
  • 60 ml (4 tablespoons) olive oil
  • 1 sprig rosemary
  • ½ lemon, juice
  • 60 ml (4 tbsp.) strong Dijon mustard
  • 60 ml (4 tbsp.) honey
  • 1 clove garlic, minced
  • Salt and pepper to taste

Optional

  • 125 ml (1/2 cup) 35% cooking cream
  • 1 pinch dried tarragon

Preparation

  1. Season chicken breasts.
  2. In a hot frying pan, sear the chicken breasts in a little olive oil for 2 minutes on each side with the rosemary sprig.
  3. Then, over medium heat, cook for a further 2 minutes.
  4. In a bowl, mix the remaining olive oil, lemon juice, mustard, honey and garlic.
  5. Pour the mixture over the chicken breasts and cook for a further 5 minutes, turning occasionally. Check seasoning.
  6. Optional: Add cream and tarragon to the prepared mixture for a creamy finish.
