Apple stuffed with ham and ricotta, rolled in bacon

Cooking time : 20 to 25 minutes

Ingredients

  • 4 whole apples, core removed
  • 250 ml (1 cup) ricotta cheese
  • 125 ml (1/2 cup) rosemary ham, chopped
  • 1 clove garlic, chopped
  • 90 ml (6 tbsp) parsley leaves, chopped
  • 125 ml (½ cup) panko breadcrumbs
  • 8 slices bacon
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a bowl, combine ricotta, ham, garlic, parsley, salt and pepper. Check seasoning.
  3. Spoon the prepared mixture into each apple.
  4. Arrange the apples in a gratin dish.
  5. Roll 2 slices of bacon around each apple.
  6. Sprinkle breadcrumbs over the top and bake for 20 to 25 minutes.
  7. Serve with a green salad.
