Ingredients
2 cloves garlic, minced
30 ml (2 tbsp) ginger, minced
15 ml (1 tbsp) lemongrass, minced
60 ml (4 tbsp) fish sauce
15 ml (1 tbsp) Sriracha or Sambal Oelek sauce
2 limes, juice
30 ml (2 tbsp) ground turmeric
90 ml (6 tbsp) honey
120 ml (8 tbsp) canola oil
8 to 12 Quebec chicken drumsticks
Preparation
In a bowl, mix the garlic, ginger, lemongrass, fish sauce, hot sauce, lime juice, turmeric, honey and canola oil.
Using the tip of a knife, prick the chicken drumsticks.
Add the chicken drumsticks to the prepared mixture and marinate for 12 hours.
Preheat the barbecue to medium temperature (180 °C / 350 °F).
On the hot barbecue grill, sear the meat, 2 to 3 minutes on each side.
Brush the chicken drumsticks and continue cooking, indirectly at 150 °C (300 °F), with the lid closed, for 40 minutes. (You can also brush halfway through cooking, then discard the remaining marinade).
