Ingredients
- 1kg (2 lb) beef scoter
- 1 l (4 cups) beef broth
- 250 ml (1 cup) tomato sauce
- 1 bay leaf
- 1 onion, thinly sliced
- 60 ml (4 tbsp.) canola oil
- 30 ml (2 tbsp) tomato paste
- 2 garlic cloves, chopped
- 1 green bell pepper, in sticks
- 125 ml (1/2 cup) white wine
- cayenne pepper to taste
- salt and pepper to taste
Preparation
- Place meat in a saucepan, add broth, tomato sauce and bay leaf, cover and cook over low heat for 4 hours.
- Remove and shred the meat. (The cooking juices will not be used).
- In a saucepan, sauté the onion in the oil for 2 minutes.
- Add the shredded beef, tomato paste, garlic, bell pepper, white wine and chili pepper, cover and simmer for 20 minutes.
- Serve with rice, fried banana or in a sandwich.
