HOT PORK SANDWICH WITH SAUTÉED VEGETABLES

INGREDIENTS
- 1 tbsp Olive oil 3/4 lb
- Québec Pork steaks
- Salt and pepper to taste
- 1/2 red bell pepper, cut into strips
- 1/2 Green bell pepper, cut into strips
- 1/2 Red onion, cut into strips
- 1/4 cup Store-bought Italian dressing: 60 ml
- 4 Small bread sticks
- 1/4 cup Store-bought olive tapenade: 60 ml
- 8 Swiss cheese slices
PREPARATION
- Preheat oven to 190°C (375°F).
- In a large skillet, heat oil over high heat and sear pork for 2 minutes on each side. Season generously.
- Add vegetables and continue cooking for 3 to 4 minutes.
- Deglaze with vinaigrette and cook for a further 2 minutes.
- Cut the bread in 2 lengthwise without going all the way through, spread with tapenade and top each with a quarter of the ingredients. Close sandwich.
- Heat the sandwiches in the oven for 5 minutes and serve immediately with French fries and crudités.
VARIATION
Replace tapenade with basil or sun-dried tomato pesto.
