Hot pork sandwich with sautéed vegetables

HOT PORK SANDWICH WITH SAUTÉED VEGETABLES

INGREDIENTS

  • 1 tbsp Olive oil 3/4 lb
  • Québec Pork steaks
  • Salt and pepper to taste
  • 1/2 red bell pepper, cut into strips
  • 1/2 Green bell pepper, cut into strips
  • 1/2 Red onion, cut into strips
  • 1/4 cup Store-bought Italian dressing: 60 ml
  • 4 Small bread sticks
  • 1/4 cup Store-bought olive tapenade: 60 ml
  • 8 Swiss cheese slices

PREPARATION

  1. Preheat oven to 190°C (375°F).
  2. In a large skillet, heat oil over high heat and sear pork for 2 minutes on each side. Season generously.
  3. Add vegetables and continue cooking for 3 to 4 minutes.
  4. Deglaze with vinaigrette and cook for a further 2 minutes.
  5. Cut the bread in 2 lengthwise without going all the way through, spread with tapenade and top each with a quarter of the ingredients. Close sandwich.
  6. Heat the sandwiches in the oven for 5 minutes and serve immediately with French fries and crudités.

VARIATION

Replace tapenade with basil or sun-dried tomato pesto.
