Creamy caramelized onion sauce

Ingredients

  • 2 onions, chopped
  • 2 garlic cloves, chopped
  • 250 ml (1 cup) dry white wine
  • 60 ml (4 tablespoons) maple syrup
  • 1 vegetable or poultry stock cube
  • 5 ml (1 tsp.) herbes de Provence blend
  • 500 ml (2 cups) 35% cream
  • 60 ml (4 tbsp.) olive oil
  • salt and pepper to taste

Preparation

  1. In a hot skillet, sauté onions in a little fat for 2 to 3 minutes.
  2. Add garlic, herbes de Provence, maple syrup and broth and cook for 1 minute.
  3. Deglaze with white wine and reduce slightly.
  4. Add the cream and continue cooking for 2 to 3 minutes. Check seasoning.
