Romesco sauce

Sauce Romesco

Ingredients

  • 2 roasted red peppers (or jarred)
  • 60 g (1/2 cup) toasted almonds
  • 2 cloves garlic
  • 1 tomato, peeled and seeded
  • 30 ml (2 tbsp.) red wine vinegar
  • 60 ml (1/4 cup) olive oil
  • 1 slice toasted bread
  • Salt and pepper to taste

Preparation

Blend peppers, almonds, garlic, tomato, vinegar and toast in a food processor until smooth. Gradually add olive oil while continuing to blend. Season with salt and pepper. This sauce goes well with grilled fish, meats or even roasted vegetables.
