Walnut and maple crusted salmon

Serves : 4

Cooking time : 15 minutes

Ingredients

  • 60 ml (4 tablespoons) olive oil
  • 30 ml (2 tablespoons) horseradish
  • 60 ml (4 tbsp.) parsley, chopped
  • 125 ml (½ cup) pecans, chopped
  • 90 ml (6 tbsp) maple syrup
  • 60 ml (4 tablespoons) panko breadcrumbs
  • 4 salmon steaks
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a bowl, combine oil, horseradish, parsley, pecans, maple syrup, breadcrumbs, salt and pepper.
  3. Coat each salmon steak with the mixture.
  4. Place salmon steaks on a baking sheet lined with a silicone mat and bake for 15 minutes.
  5. Serve with green beans and rice.
