GRILLED SALMON WITH BROWNED LEEKS
Portions : 4- Preparation : 10 minutes - Cooking : 15 minutes
Ingredients
- ½ whole salmon fillet (about 700 g)
- 60 ml (4 tablespoons) breadcrumbs
- 1 lemon, sliced
- 60 ml (4 tablespoons) olive oil
- 2 leeks
- 60 ml (4 tbsp.) dry white wine
- 30 ml (2 tbsp.) maple syrup
- 1 clove garlic, minced
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200° C (400° F).
- Place salmon on a baking sheet lined with parchment paper or a silicone mat. Season with salt and pepper, sprinkle with breadcrumbs and cover with lemon slices. Add a drizzle (30 ml / 2 tbsp) of olive oil.
- Bake for 15 minutes.
- Meanwhile, cut leeks lengthwise, then in half to obtain 4 segments per leek.
- In a hot frying pan, brown the leeks on all sides in the remaining olive oil.
- Deglaze with white wine, then reduce until almost dry. Over low heat, add the maple syrup and garlic and cook for a further 3 minutes. Season with salt and pepper.
- Serve with salmon, leeks and homemade mashed potatoes.
