Ingredients
- 4 green onions, cut into chunks
- 1 red bell pepper, julienned
- 1 broccoli, chopped
- 60 ml (4 tbsp.) canola oil
- 15 ml (1 tbsp.) tomato paste
- 2 garlic cloves, minced
- 30 ml (2 tbsp.) ginger, chopped
- 60 ml (4 tbsp.) soy sauce
- 15 ml (1 tbsp) honey
- 1 lime, juice
- 125 ml (1/2 cup) vegetable broth
- 45 ml (3 tbsp.) sesame oil
- 4 portions cooked Konjac noodles
- 60 ml (4 tbsp) coriander leaves, chopped
Option: Add shrimp to the stir-fry, or another protein of your choice.
Preparation
- In a hot skillet, sauté green onions, red bell pepper and broccoli in oil for 2 minutes.
- Add the tomato paste, garlic, ginger, soy sauce, honey, lime juice, broth and sesame oil and sauté for 1 minute.
- Add the cooked pasta and stir. Check the seasoning. Sprinkle the coriander over the top.
