Konjac stir-fry with vegetables

Cooking time : 3 minutes

Ingredients

  • 4 green onions, cut into chunks
  • 1 red bell pepper, julienned
  • 1 broccoli, chopped
  • 60 ml (4 tbsp.) canola oil
  • 15 ml (1 tbsp.) tomato paste
  • 2 garlic cloves, minced
  • 30 ml (2 tbsp.) ginger, chopped
  • 60 ml (4 tbsp.) soy sauce
  • 15 ml (1 tbsp) honey
  • 1 lime, juice
  • 125 ml (1/2 cup) vegetable broth
  • 45 ml (3 tbsp.) sesame oil
  • 4 portions cooked Konjac noodles
  • 60 ml (4 tbsp) coriander leaves, chopped

Option: Add shrimp to the stir-fry, or another protein of your choice.

Preparation

  1. In a hot skillet, sauté green onions, red bell pepper and broccoli in oil for 2 minutes.
  2. Add the tomato paste, garlic, ginger, soy sauce, honey, lime juice, broth and sesame oil and sauté for 1 minute.
  3. Add the cooked pasta and stir. Check the seasoning. Sprinkle the coriander over the top.
