"Smoked meat of beet and fresh goat's cheese

BEET AND FRESH GOAT'S CHEESE SMOKED MEAT

Portions : 4 - Preparation time : 10 minutes - Cooking time : 75 minutes

Ingredients

  • 8 beets, peeled, thinly sliced
  • 125 ml (1/2 cup) vegetable broth
  • 1 garlic clove, minced
  • 8 ml (1/2 tbsp.) smoked liquid
  • 60 ml (4 tbsp.) soy sauce
  • 60 ml (4 tbsp.) Worcestershire sauce
  • 15 ml (1 tbsp.) Montreal steak spice blend
  • 45 ml (3 tbsp.) sugar
  • 60 ml (4 tbsp.) white vinegar
  • 60 ml (4 tbsp.) olive oil
  • 250 ml (1 cup) goat cheese
  • 500 ml (2 cups) bread croutons
  • Qs Yellow mustard
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 160°C (325°F).
  2. In a casserole dish, combine beets, broth, garlic, smoked liquid, soy sauce, Worcestershire sauce, steak spices, sugar, vinegar, olive oil, salt and pepper, cover and bake for 75 minutes.
  3. Remove beet slices.
  4. Place a few slices of beet smoked meat on each plate, spread with goat cheese, croutons and a touch of yellow mustard.
