BEET AND FRESH GOAT'S CHEESE SMOKED MEAT

Ingredients
- 8 beets, peeled, thinly sliced
- 125 ml (1/2 cup) vegetable broth
- 1 garlic clove, minced
- 8 ml (1/2 tbsp.) smoked liquid
- 60 ml (4 tbsp.) soy sauce
- 60 ml (4 tbsp.) Worcestershire sauce
- 15 ml (1 tbsp.) Montreal steak spice blend
- 45 ml (3 tbsp.) sugar
- 60 ml (4 tbsp.) white vinegar
- 60 ml (4 tbsp.) olive oil
- 250 ml (1 cup) goat cheese
- 500 ml (2 cups) bread croutons
- Qs Yellow mustard
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 160°C (325°F).
- In a casserole dish, combine beets, broth, garlic, smoked liquid, soy sauce, Worcestershire sauce, steak spices, sugar, vinegar, olive oil, salt and pepper, cover and bake for 75 minutes.
- Remove beet slices.
- Place a few slices of beet smoked meat on each plate, spread with goat cheese, croutons and a touch of yellow mustard.
