LEMON AND C PRES CHICKEN SKEWER

Ingredients
- 60 ml (4 tablespoons) capers, chopped
- 60 ml (4 tablespoons) maple syrup
- 2 sprigs thyme, leaves removed
- 2 garlic cloves, chopped
- 2 lemons, juice
- 60 ml (4 tbsp.) olive oil
- 600 g (20 ½ oz) Québec chicken breasts, cubed
- 1 red bell pepper, chopped
- 1 red onion, chopped
- 60 ml (4 tbsp.) grated Parmesan cheese
Preparation
- Preheat the BBQ to maximum.
- In a bowl, combine capers, maple syrup, thyme, garlic, lemon juice and olive oil.
- Keep the squeezed lemon halves and cut them into pieces for the skewers.
- Add the chicken cubes and marinate for 5 minutes.
- Make skewers by alternating chicken, red bell pepper, onion and lemon pieces.
- Place the skewers on the grill and sear for 2 minutes on each side, then cook indirectly for 5 to 6 minutes or more, depending on the size of the chicken cubes.
- Remove from the BBQ, sprinkle with grated Parmesan and enjoy.
