Grilled tomato skewers with arugula pesto

GRILLED TOMATO BROCHETTES WITH ARUGULA PESTO

Portions : 4 - Preparation time : 20 minutes - Cooking time : 8 minutes

Ingredients

  • 60 ml (4 tablespoons) Parmesan cheese
  • 60 ml (4 tablespoons) pecans
  • 45 ml (3 tablespoons) balsamic vinegar
  • 125 ml (1/2 cup) olive oil
  • 1 garlic clove
  • 1 lemon, zest
  • 250 ml (1 cup) arugula
  • 18 cubes 1'' x 1'' Halloumi cheese
  • 18 multicolored cherry tomatoes
  • salt and freshly ground pepper to taste

Preparation

  1. Preheat BBQ to maximum.
  2. Rinse Halloumi cheese under running water.
  3. Alternate cheese cubes and tomatoes to make skewers.
  4. Place the skewers on the BBQ grill and grill for 3-4 minutes on each side.
  5. Meanwhile, using a hand blender or food processor, puree the Parmesan, pecans, balsamic vinegar, olive oil, garlic, zest and arugula.
  6. Before serving, brush skewers with prepared pesto.
