GRILLED TOMATO BROCHETTES WITH ARUGULA PESTO
Portions : 4 - Preparation time : 20 minutes - Cooking time : 8 minutes
Ingredients
- 60 ml (4 tablespoons) Parmesan cheese
- 60 ml (4 tablespoons) pecans
- 45 ml (3 tablespoons) balsamic vinegar
- 125 ml (1/2 cup) olive oil
- 1 garlic clove
- 1 lemon, zest
- 250 ml (1 cup) arugula
- 18 cubes 1'' x 1'' Halloumi cheese
- 18 multicolored cherry tomatoes
- salt and freshly ground pepper to taste
Preparation
- Preheat BBQ to maximum.
- Rinse Halloumi cheese under running water.
- Alternate cheese cubes and tomatoes to make skewers.
- Place the skewers on the BBQ grill and grill for 3-4 minutes on each side.
- Meanwhile, using a hand blender or food processor, puree the Parmesan, pecans, balsamic vinegar, olive oil, garlic, zest and arugula.
- Before serving, brush skewers with prepared pesto.
