AZTEC BURGERS

INGREDIENTS
- 1 ripe avocado, pitted
- 2 tsp. lime (or lemon) juice
- 6 pieces sun-dried tomatoes (or 3 dried apricots), finely chopped
- 1/2-1 tsp Chopped seeded hot pepper (wear gloves if sensitive)
- 3/4 lb Québec Pork, lean ground
- 1 Onion, finely chopped
- 1 egg
- 2 tbsp Old-fashioned mustard
- 30 ml Salt and freshly ground pepper to taste
- 4 Pita breads or wheat tortillas (soft)
- 4 Cheese slices (Monterey Jack, Swiss or other)
- 4 Leaf lettuce (red or green)
PREPARATION
- Coarsely purée avocado flesh and mix with lime juice, sun-dried tomatoes and chili pepper. Set aside.
- Mix ground pork with onion, egg and mustard. Season to taste. Shape into 12 balls.
- Grill on medium heat on the BBQ, under the broiler or in a grill pan for 6 to 8 min. Turn over with tongs halfway through cooking. Season with salt. In the meantime, toast the breads or warm up the tortillas.
- Top breads in this order: cheese, lettuce, meatballs, then avocado mixture. Roll up and serve half-wrapped in wax paper to hold together.
VARIATION
Replace avocado mixture with store-bought guacamole.
SERVING SUGGESTION
Corn chips and melon wedges.
