Fettuccine, tomato and bacon sauce, capers, black olives and basil

FETTUCCINE, TOMATO AND BACON SAUCE, C PRES, BLACK OLIVES AND BASIL

Ingredients

  • 1 package Catelli Fettuccine
  • 1 onion, thinly sliced
  • 60 ml (4 tablespoons) fat of your choice (oil or Mycryo cocoa butter)
  • 1 garlic clove, minced
  • 250 ml (1 cup) homemade tomato sauce
  • 60 ml (4 tbsp.) capers
  • 60 ml (4 tbsp.) black olives, sliced
  • 45 ml (3 tbsp.) balsamic vinegar
  • 8 slices bacon, cooked crisp and chopped
  • 45 ml (3 tbsp.) basil leaves, chopped
  • 125 ml (1/2 cup) grated Parmesan cheese
  • salt and freshly ground pepper to taste

Preparation

  1. In a large pot of boiling, salted water, cook pasta according to manufacturer's instructions.
  2. Meanwhile, in a hot frying pan, sauté the onion in the fat of your choice until browned.
  3. Add the garlic, tomato sauce, capers, olives and balsamic vinegar and simmer for 5 minutes over medium heat. Check the seasoning.
  4. Add the pasta, bacon and basil to the pan and toss to combine. Cover with grated Parmesan.
