FETTUCCINE, TOMATO AND BACON SAUCE, C PRES, BLACK OLIVES AND BASIL

Ingredients
- 1 package Catelli Fettuccine
- 1 onion, thinly sliced
- 60 ml (4 tablespoons) fat of your choice (oil or Mycryo cocoa butter)
- 1 garlic clove, minced
- 250 ml (1 cup) homemade tomato sauce
- 60 ml (4 tbsp.) capers
- 60 ml (4 tbsp.) black olives, sliced
- 45 ml (3 tbsp.) balsamic vinegar
- 8 slices bacon, cooked crisp and chopped
- 45 ml (3 tbsp.) basil leaves, chopped
- 125 ml (1/2 cup) grated Parmesan cheese
- salt and freshly ground pepper to taste
Preparation
- In a large pot of boiling, salted water, cook pasta according to manufacturer's instructions.
- Meanwhile, in a hot frying pan, sauté the onion in the fat of your choice until browned.
- Add the garlic, tomato sauce, capers, olives and balsamic vinegar and simmer for 5 minutes over medium heat. Check the seasoning.
- Add the pasta, bacon and basil to the pan and toss to combine. Cover with grated Parmesan.
