MINI SALMON AND MISO SANDWICH

Ingredients
- 2 garlic cloves
- 250 ml (1 cup) maple syrup
- 125 ml (1/2 cup) yellow miso
- 600 gr (20 ½ oz) salmon fillet
- 2 onions, sliced
- 90 ml (6 tbsp) white balsamic vinegar
- 125 ml (1/2 cup) mayonnaise
- 15 ml (1 tbsp.) Sriracha sauce
- ½ bunch fresh cilantro, leaves removed, chopped
- 12 burger buns
- 500 ml (2 cups) Romaine lettuce, chopped
- salt and freshly ground pepper to taste
- 1 cedar plank, soaked in water
Preparation
- Preheat the BBQ to maximum.
- In a bowl, combine garlic, maple syrup, miso and pepper.
- Coat the salmon fillet with this sauce and marinate for 5 minutes.
- Meanwhile, in another bowl, combine the onion rings, balsamic vinegar, salt and pepper.
- Place the salmon fillet on the cedar plank.
- Place the cedar plank on the BBQ grill. Place the onion rings on top of the salmon fillet.
- Close the lid and cook for 5 minutes. Remove and set aside the onion rings. Close the lid and cook for a further 10 minutes.
- Meanwhile, in a bowl, mix the mayonnaise, Sriracha sauce and coriander.
- Top each bun with mayonnaise and salad. Add a piece of salmon and scatter over the grilled onions.
