Min sandwich with salmon and miso

MINI SALMON AND MISO SANDWICH

Portions :4 - Preparation : 15 minutes - Cooking : 15 minutes

Ingredients

  • 2 garlic cloves
  • 250 ml (1 cup) maple syrup
  • 125 ml (1/2 cup) yellow miso
  • 600 gr (20 ½ oz) salmon fillet
  • 2 onions, sliced
  • 90 ml (6 tbsp) white balsamic vinegar
  • 125 ml (1/2 cup) mayonnaise
  • 15 ml (1 tbsp.) Sriracha sauce
  • ½ bunch fresh cilantro, leaves removed, chopped
  • 12 burger buns
  • 500 ml (2 cups) Romaine lettuce, chopped
  • salt and freshly ground pepper to taste
  • 1 cedar plank, soaked in water

Preparation

  1. Preheat the BBQ to maximum.
  2. In a bowl, combine garlic, maple syrup, miso and pepper.
  3. Coat the salmon fillet with this sauce and marinate for 5 minutes.
  4. Meanwhile, in another bowl, combine the onion rings, balsamic vinegar, salt and pepper.
  5. Place the salmon fillet on the cedar plank.
  6. Place the cedar plank on the BBQ grill. Place the onion rings on top of the salmon fillet.
  7. Close the lid and cook for 5 minutes. Remove and set aside the onion rings. Close the lid and cook for a further 10 minutes.
  8. Meanwhile, in a bowl, mix the mayonnaise, Sriracha sauce and coriander.
  9. Top each bun with mayonnaise and salad. Add a piece of salmon and scatter over the grilled onions.
