Meat and dried fruit pâté

P TEE WITH MEAT AND DRIED FRUIT

Portions : 4 - Preparation : 10 minutes - Cooking time : about 1 hour and 40 minutes

Ingredients

  • 1 lb lean beef, ground
  • 1/2 lbs veal, ground
  • 1/2 lbs pork, ground
  • 60 ml (4 tablespoons) olive oil
  • 1 onion, chopped
  • 30 ml (2 tbsp.) maple syrup
  • 3 ml (1/2 tsp.) nutmeg, ground
  • 3 ml (1/2 tsp.) cinnamon, ground
  • 3 ml (1/2 tsp.) ginger, ground
  • 3 ml (1/2 tsp.) savory, ground
  • 30 ml (2 tbsp.) concentrated beef broth
  • 60 ml (4 tbsp.) soy sauce
  • 60 ml (4 tbsp.) dried cranberries
  • 60 ml (4 tbsp.) raisins
  • 2 pastry shells
  • salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 160°C (325°F).
  2. In a hot skillet, brown ground beef in a little oil for 2-3 minutes, until nicely browned. Remove and set aside on a plate.
  3. In the same hot pan, brown the ground veal for 2 to 3 minutes, until nicely colored. Remove and set aside in the dish with the beef.
  4. In the same hot skillet, brown the ground pork for 2 to 3 minutes, until nicely colored. Remove and set aside in the dish with the beef and veal.
  5. Still in the hot pan, sauté the onion and maple syrup for 2 to 3 minutes.
  6. Add the ground meats, nutmeg, cinnamon, ginger, savory, beef broth and soy sauce, then add the cranberries, raisins and breadcrumbs and mix well.
  7. Place one layer of pastry in a pie tin, add the meat mixture, cover with the other layer of pastry and bake for 90 minutes.
