PIZZA WITH YELLOW TOMATOES AND CARAMELIZED ONIONS
Portions : 4 - Preparation : 20 minutes - Cooking : 25 minutes
Ingredients
- 2 scoops homemade or store-bought pizza dough
- 250 ml (1 cup) sour cream
- 12 yellow cocktail tomatoes, cut in 2
- 1 onion, sliced into rings
- 2 garlic cloves, chopped
- 60 ml (4 tablespoons) olive oil
- 60 ml (4 tablespoons) white balsamic vinegar
- 15 ml (1 tbsp.) thyme, thinly sliced
- 2 mozzarella balls, cut into pieces
- 8 slices bacon, cooked crisp and chopped
- salt and freshly ground pepper to taste
Preparation
- Preheat oven, rack in center, to 260°C (500°F), with pizza stone or BBQ on maximum if possible.
- In a bowl, combine tomatoes, onion, garlic, oil, vinegar, thyme, salt and pepper.
- On an ovenproof tray, covered with parchment paper or a silicone mat, pour the bowl and spread the tomatoes and onions covered with their prepared sauce. Bake for 15 minutes.
- Meanwhile, spread the pizza dough on the work surface. Cover each pizza with sour cream, arrange tomatoes, onions, mozzarella and bacon. Bake for 8 to 10 minutes.
