POKÉ SMOKED SALMON, RICE, WATERMELON, GRILLED JALAPENOS AND FETA CHEESE
Portions : 4 - Preparation : 20 minutes - Cooking time : 6 minutes
Ingredients
- 400 g (13 1/2 oz) smoked salmon
- 125 ml (½ cup) feta cheese, crumbled
- 250 ml (2 cups) watermelon, cubed
- 8 jalapenos, drained and without any white membrane
- ½ red onion, thinly sliced
- 90 ml (6 tablespoons) parsley leaves
- 45 ml (3 tablespoons) olive oil
- 45 ml (3 tablespoons) balsamic vinegar
- 4 portions sushi rice, cooked and chilled
- 250 ml (1 cup) fresh spinach leaves
- 2 bagels, thinly sliced
- Salt and pepper to taste
Preparation
- In a hot ridged pan or on the BBQ, grill the jalapenos for 3 minutes on each side, or until browned.
- Then cut into cubes. Season to taste.
- Toast bagel slices in a toaster.
- Meanwhile, roll up salmon slices.
- In a bowl, combine watermelon cubes, onion, oil, vinegar, parsley, salt and pepper.
- In each serving bowl, divide the rice, smoked salmon, feta cheese, watermelon cubes, spinach leaves and bagel croutons.
