Poké smoked salmon, rice, watermelon, grilled jalapenos and feta cheese

POKÉ SMOKED SALMON, RICE, WATERMELON, GRILLED JALAPENOS AND FETA CHEESE

Portions : 4 - Preparation : 20 minutes - Cooking time : 6 minutes

Ingredients

  • 400 g (13 1/2 oz) smoked salmon
  • 125 ml (½ cup) feta cheese, crumbled
  • 250 ml (2 cups) watermelon, cubed
  • 8 jalapenos, drained and without any white membrane
  • ½ red onion, thinly sliced
  • 90 ml (6 tablespoons) parsley leaves
  • 45 ml (3 tablespoons) olive oil
  • 45 ml (3 tablespoons) balsamic vinegar
  • 4 portions sushi rice, cooked and chilled
  • 250 ml (1 cup) fresh spinach leaves
  • 2 bagels, thinly sliced
  • Salt and pepper to taste

Preparation

  1. In a hot ridged pan or on the BBQ, grill the jalapenos for 3 minutes on each side, or until browned.
  2. Then cut into cubes. Season to taste.
  3. Toast bagel slices in a toaster.
  4. Meanwhile, roll up salmon slices.
  5. In a bowl, combine watermelon cubes, onion, oil, vinegar, parsley, salt and pepper.
  6. In each serving bowl, divide the rice, smoked salmon, feta cheese, watermelon cubes, spinach leaves and bagel croutons.
