Shredded chicken with bbq sauce

SHREDDED CHICKEN IN BBQ SAUCE

Portions : 4 - Preparation : 15 minutes - Cooking time : 1 hour 15 minutes

Ingredients

  • 1 raw Québec chicken, cut in half
  • 15 ml (1 tablespoon) smoked paprika
  • 2 garlic cloves, chopped
  • 2 onions, chopped
  • 250 ml (1 cup) brown sugar
  • 2 lemons, quartered
  • 45 ml (3 tbsp.) salt
  • 45 ml (3 tbsp.) pepper
  • 500 ml (2 cups) BBQ sauce
  • 250 ml (1 cup) white vinegar
  • 8 burger buns or other small sandwiches
  • 500 ml (2 cups) coleslaw

Preparation

  1. Place chicken halves in a saucepan, add paprika, garlic, onions, brown sugar, vinegar, lemon wedges, salt and pepper, and cover with water. Bring to the boil and cook for 1 hour.
  2. Preheat oven, rack in center, to 200°C (400°F).
  3. Remove meat from broth. Shred the meat in a bowl and cover with BBQ sauce.
  4. Reheat the meat in the oven for approximately 10 minutes.
  5. Top each sandwich loaf with meat and coleslaw.
