SHREDDED CHICKEN IN BBQ SAUCE

Ingredients
- 1 raw Québec chicken, cut in half
- 15 ml (1 tablespoon) smoked paprika
- 2 garlic cloves, chopped
- 2 onions, chopped
- 250 ml (1 cup) brown sugar
- 2 lemons, quartered
- 45 ml (3 tbsp.) salt
- 45 ml (3 tbsp.) pepper
- 500 ml (2 cups) BBQ sauce
- 250 ml (1 cup) white vinegar
- 8 burger buns or other small sandwiches
- 500 ml (2 cups) coleslaw
Preparation
- Place chicken halves in a saucepan, add paprika, garlic, onions, brown sugar, vinegar, lemon wedges, salt and pepper, and cover with water. Bring to the boil and cook for 1 hour.
- Preheat oven, rack in center, to 200°C (400°F).
- Remove meat from broth. Shred the meat in a bowl and cover with BBQ sauce.
- Reheat the meat in the oven for approximately 10 minutes.
- Top each sandwich loaf with meat and coleslaw.
