Cajun Chicken Breast with Condiment

Ingredients

Chicken

  • 4 chicken breasts
  • 60 ml (4 tbsp) Cajun spice mix
  • 30 ml (2 tbsp) olive oil

Condiment

  • 45 ml (3 tbsp) capers
  • Lemon, zest
  • 30 ml (2 tbsp) honey
  • 45 ml (3 tbsp) fresh parsley leaves, chopped
  • 45 ml (3 tbsp) fresh mint leaves, chopped
  • 2 green onions, thinly sliced
  • 125 ml (1/2 cup) fresh pineapple, cubed
  • 60 ml (4 tbsp) olive oil
  • Salt and pepper, to taste

Preparation

  1. Season and coat chicken breasts with Cajun spice mix.
  2. In a hot skillet over medium-high heat, sear the breasts in a little olive oil until they are brown on both sides.
  3. Remove the breasts and place them on a baking sheet and cook in the oven at 200 °C (400 °F) for about 15 minutes, until they are cooked through.
  4. Meanwhile, prepare the condiment: in a bowl, mix the capers, lemon zest, honey, parsley, mint, green onions, pineapple cubes and olive oil, salt and pepper to taste.
  5. Slice the breasts.
  6. On each plate, divide the chicken slices and garnish generously with the prepared condiment.
  7. Serve with mashed potatoes and a few roasted vegetables.
