Ingredients
Chicken
- 4 chicken breasts
- 60 ml (4 tbsp) Cajun spice mix
- 30 ml (2 tbsp) olive oil
Condiment
- 45 ml (3 tbsp) capers
- Lemon, zest
- 30 ml (2 tbsp) honey
- 45 ml (3 tbsp) fresh parsley leaves, chopped
- 45 ml (3 tbsp) fresh mint leaves, chopped
- 2 green onions, thinly sliced
- 125 ml (1/2 cup) fresh pineapple, cubed
- 60 ml (4 tbsp) olive oil
- Salt and pepper, to taste
Preparation
- Season and coat chicken breasts with Cajun spice mix.
- In a hot skillet over medium-high heat, sear the breasts in a little olive oil until they are brown on both sides.
- Remove the breasts and place them on a baking sheet and cook in the oven at 200 °C (400 °F) for about 15 minutes, until they are cooked through.
- Meanwhile, prepare the condiment: in a bowl, mix the capers, lemon zest, honey, parsley, mint, green onions, pineapple cubes and olive oil, salt and pepper to taste.
- Slice the breasts.
- On each plate, divide the chicken slices and garnish generously with the prepared condiment.
- Serve with mashed potatoes and a few roasted vegetables.
