Chicken wings, coffee and maple syrup in bite-sized form

Ingredients

  • 24 Quebec chicken wings
  • 90 ml (6 tbsp) cornstarch
  • Salt and pepper to taste

The sauce

  • 90 ml (6 tbsp) maple syrup
  • 15 ml (1 tbsp) instant coffee
  • 1 clove garlic, minced
  • 1 pinch cayenne pepper
  • 30 ml (2 tbsp) soy sauce
  • 60 ml (4 tbsp) white vinegar
  • Salt and pepper to taste

Preparation

  • Preheat the fryer oil to 180 °C (350 °F).
  • Coat the chicken wings with cornstarch, salt and pepper.
  • Dip the wings in the fryer oil and cook until cooked through and browned.
  • Meanwhile, in a bowl, mix maple syrup, coffee, garlic, chili, soy sauce, vinegar, salt and pepper. Check the seasoning.
  • Dip the wings in the prepared sauce, just before serving.
