Open bagel brunch with smoked Coho salmon and tomato salad

Bagel brunch ouvert au saumon Coho fumé et salade de tomates

  1. Prepare the scrambled eggs or omelette with a little olive oil, salt and pepper, then set aside.
  2. Mix the diced tomatoes with the red onion, olive oil, red wine vinegar, salt and pepper to make the tomato salad.
  3. On each toasted bagel half, place a portion of eggs and a few slices of smoked Coho salmon log.
  4. Add a dollop of tomato salad on top.
  5. Add hot sauce, if desired, and serve immediately.
