Ingredients
- 4 bagels, halved and toasted
- 1 smoked Coho salmon and dried cranberry log with cream cheese topping (thawed)
- 6 eggs (for scrambled eggs or an omelet)
- 30 ml (2 tbsp.) olive oil for cooking eggs
- 2 cups tomatoes, diced
- 1/2 red onion, thinly sliced
- 30 ml (2 tbsp.) olive oil for the salad
- 15 ml (1 tbsp.) red wine vinegar
- Salt and pepper to taste
- Hot sauce (optional)
Preparation
- Prepare the scrambled eggs or omelette with a little olive oil, salt and pepper, then set aside.
- Mix the diced tomatoes with the red onion, olive oil, red wine vinegar, salt and pepper to make the tomato salad.
- On each toasted bagel half, place a portion of eggs and a few slices of smoked Coho salmon log.
- Add a dollop of tomato salad on top.
- Add hot sauce, if desired, and serve immediately.
