Chickpea and chocolate cookies

Ingredients

  • 125ml (1/2 cup) butter
  • 45ml (3 tablespoons) sugar
  • 3ml (1/2 teaspoon) natural vanilla extract
  • 330ml (1 1/3 cups) brown sugar
  • 1 egg
  • 2 pinches salt
  • 8ml (1/2 tbsp) baking powder
  • 250ml (1 cup) chickpea flour
  • 125ml (1/2 cup) rolled oats
  • 250 ml (1 cup) cooked chickpeas, mashed
  • 250 ml (1 cup) Cacao Barry Ocoa chocolate chips, crushed

Preparation

  1. Preheat oven, rack in center, to 180°C (350°F).
  2. In a bowl, whisk together butter, sugar, vanilla and brown sugar.
  3. Stir in egg, salt, baking powder, chickpea flour, rolled oats and chickpea purée.
  4. Stir in chocolate chips.
  5. Shape into balls the size of Ping-Pong balls.
  6. Place on a baking sheet lined with a silicone mat and bake for 15 minutes.
  7. Cool on a wire rack.
