Ingredients
- 125ml (1/2 cup) butter
- 45ml (3 tablespoons) sugar
- 3ml (1/2 teaspoon) natural vanilla extract
- 330ml (1 1/3 cups) brown sugar
- 1 egg
- 2 pinches salt
- 8ml (1/2 tbsp) baking powder
- 250ml (1 cup) chickpea flour
- 125ml (1/2 cup) rolled oats
- 250 ml (1 cup) cooked chickpeas, mashed
- 250 ml (1 cup) Cacao Barry Ocoa chocolate chips, crushed
Preparation
- Preheat oven, rack in center, to 180°C (350°F).
- In a bowl, whisk together butter, sugar, vanilla and brown sugar.
- Stir in egg, salt, baking powder, chickpea flour, rolled oats and chickpea purée.
- Stir in chocolate chips.
- Shape into balls the size of Ping-Pong balls.
- Place on a baking sheet lined with a silicone mat and bake for 15 minutes.
- Cool on a wire rack.
