Potato blinis

  1. Heat the mashed potatoes in the vacuum bag by immersing in boiling water for about 5 minutes. Once hot, use half the bag (340 g) and pour the mashed potatoes into a bowl.
  2. In another bowl, beat the egg, then add the flour, milk and baking powder. Mix until smooth.
  3. Add the mashed potatoes to the mixture, season with salt and pepper, and mix well.
  4. Heat a frying pan over medium heat with a little oil or butter.
  5. Pour small amounts of batter into the pan (about 2 tablespoons per blini) and cook each blini for 2-3 minutes on each side, until golden and cooked through.
  6. Transfer cooked blinis to paper towels to remove excess fat.
  7. Serve the Potato Blinis warm with the toppings of your choice (crème fraîche, smoked salmon, fresh herbs, etc.).
