Ingredients
- 340 g mashed potatoes (half the 680 g vacuum-packed bag)
- 1 egg
- 30 ml (2 tbsp.) flour
- 60 ml (1/4 cup) milk
- 1/2 tsp baking powder
- Salt and pepper to taste
- Oil or butter for baking
Preparation
- Heat the mashed potatoes in the vacuum bag by immersing in boiling water for about 5 minutes. Once hot, use half the bag (340 g) and pour the mashed potatoes into a bowl.
- In another bowl, beat the egg, then add the flour, milk and baking powder. Mix until smooth.
- Add the mashed potatoes to the mixture, season with salt and pepper, and mix well.
- Heat a frying pan over medium heat with a little oil or butter.
- Pour small amounts of batter into the pan (about 2 tablespoons per blini) and cook each blini for 2-3 minutes on each side, until golden and cooked through.
- Transfer cooked blinis to paper towels to remove excess fat.
- Serve the Potato Blinis warm with the toppings of your choice (crème fraîche, smoked salmon, fresh herbs, etc.).
