Shrimp puff pastry bites

Serves : 4

Preparation time: 30 minutes

Cooking time : 20 to 25 minutes

Ingredients

  • 1 pure butter puff pastry (store-bought)
  • 1 egg yolk, beaten with a little water
  • 15 ml (1 tbsp.) poppy seeds
  • 250 ml (1 cup) cooked prawns
  • 125 ml (1/2 cup) cream cheese
  • 30 ml (2 tbsp.) dill
  • 30 ml (2 tbsp.) chives
  • 15 ml (1 tbsp) white balsamic vinegar
  • 30 ml (2 tbsp.) mayonnaise
  • 15 ml (1 tbsp) pink peppercorns, cracked
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. Using a star-shaped pastry cutter, cut out the puff pastry on the work surface.
  3. On an ovenproof baking sheet lined with a silicone mat, spread out the pastry pieces.
  4. Brush with egg yolk and sprinkle with a few poppy seeds, and bake for 20 to 25 minutes, until puffed and golden.
  5. Leave to cool.
  6. In a bowl, using a hand blender or small food processor, cream together the shrimp, cream cheese, dill, chives, vinegar, mayonnaise and pink pepper. Check seasoning.
  7. Fill a pastry bag with a fluted tip.
  8. Using the pastry bag, pipe the mixture onto each star of puff pastry, then sprinkle with a few poppy seeds.
