Ingredients
- 1 pure butter puff pastry (store-bought)
- 1 egg yolk, beaten with a little water
- 15 ml (1 tbsp.) poppy seeds
- 250 ml (1 cup) cooked prawns
- 125 ml (1/2 cup) cream cheese
- 30 ml (2 tbsp.) dill
- 30 ml (2 tbsp.) chives
- 15 ml (1 tbsp) white balsamic vinegar
- 30 ml (2 tbsp.) mayonnaise
- 15 ml (1 tbsp) pink peppercorns, cracked
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- Using a star-shaped pastry cutter, cut out the puff pastry on the work surface.
- On an ovenproof baking sheet lined with a silicone mat, spread out the pastry pieces.
- Brush with egg yolk and sprinkle with a few poppy seeds, and bake for 20 to 25 minutes, until puffed and golden.
- Leave to cool.
- In a bowl, using a hand blender or small food processor, cream together the shrimp, cream cheese, dill, chives, vinegar, mayonnaise and pink pepper. Check seasoning.
- Fill a pastry bag with a fluted tip.
- Using the pastry bag, pipe the mixture onto each star of puff pastry, then sprinkle with a few poppy seeds.
