Ultra-soft and delicious brownies

Ingredients

  • 250 ml (1 cup) unsalted butter, melted
  • 250 ml (1 cup) sugar
  • 250 ml (1 cup) brown sugar
  • 5 ml (1 tsp) vanilla extract
  • 3 eggs
  • 125 ml (1/2 cup) unsweetened cocoa powder
  • 250 ml (1 cup) flour
  • 5 ml (1 tsp) salt
  • 5 ml (1 tsp) baking powder
  • 125 ml (1/2 cup) white chocolate chips
  • 125 ml (1/2 cup) pecans or walnuts, crushed

Trim

  • Vanilla or caramel ice cream
  • Crushed nuts for finishing

Preparation

  1. Preheat the oven to 350°F (175°C) and line an 8-inch (20 cm) square pan with parchment paper.
  2. In a bowl, mix together the melted butter, sugar, brown sugar and vanilla. Add the eggs one at a time, whisking until smooth.
  3. Sift together the cocoa, flour, salt and baking powder, then gradually incorporate into the wet mixture, stirring with a spatula. Add the white chocolate chips and crushed nuts, then mix gently.
  4. Pour the batter into the pan and smooth the surface. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  5. Let cool before cutting into squares. Serve with a scoop of ice cream and sprinkle with crushed nuts for a crunchy touch.
