Vegetarian burger

Ingredients

  • 250 ml (1 cup) canned chickpeas, rinsed
  • 250 ml (1 cup) canned lentils, rinsed
  • 2 garlic cloves, chopped
  • 120 ml (8 tbsp.) parsley leaves, chopped
  • 120 ml (8 tbsp.) chives, snipped
  • 60 ml (4 tbsp.) oats
  • 45 ml (3 tbsp.) soy sauce
  • 1 lemon, juice
  • 4 eggs
  • 250 ml (1 cup) chickpea flour
  • 60 ml (4 tbsp.) fat of your choice (butter, oil or Mycryo cocoa butter)
  • Salt and pepper to taste

Topping

  • Burger bun
  • Condiments of your choice
  • Tomato, lettuce

Preparation

  • In a bowl, food processor or hand blender, purée chickpeas, lentils, garlic, parsley, chives, oats, eggs, soy sauce and lemon juice.
  • Gradually blend in chickpea flour until a dense, malleable texture is obtained. Season with salt and pepper.
  • Form into patties.
  • In a hot frying pan, sear the patties in the fat of your choice for 2-3 minutes on each side. Continue cooking over medium heat for 5 minutes.
  • Garnish burgers to taste and add a veggie burger patty.
