BURGERS WITH MANGO AND TOMATO SALSA

INGREDIENTS
- 1 Small red onion, finely chopped
- 1 tablespoon Canola oil
- 1 lb Lean ground Québec Pork
- 1/4 tsp Ground cayenne pepper
- 1 tsp Ground coriander seeds
- 2 tsp. Dijon mustard
- 1 egg
- 1/2 cup Crumbled dried bread crumbs
- Salt and freshly ground pepper to taste
- 4 Pita or Kaiser breads
- 8 Lettuce leaves
PREPARATION
- Heat the oil in a small skillet over medium-high heat and sauté the onion for 2 to 3 min. Let cool.
- In a bowl, combine cooked onion, ground pork, cayenne pepper, ground coriander, Dijon mustard, egg and bread crumbs. Refrigerate for 2 h.
- Combine all salsa ingredients in a bowl. Cover and set aside.
- Shape meat into 8 patties, 1 cm (1/2") thick. Grill under the broiler (keep oven ajar) or in a grill pan over medium-high heat for 8 to 10 min. Turn once halfway through cooking and season with salt.
- Cut pita bread in half and open each half to form pockets. Garnish pockets with pork patty, lettuce leaves and salsa.
VARIATION
For a different flavor, add 5 ml (1 tsp.) ground cumin and 2 ml (1/2 tsp.) ground cinnamon to the ground pork mixture.
SERVING SUGGESTION
Serve with raw vegetables such as bell pepper strips, broccoli florets and cucumber slices.
