Burgers with mango and tomato salsa

BURGERS WITH MANGO AND TOMATO SALSA

INGREDIENTS

  • 1 Small red onion, finely chopped
  • 1 tablespoon Canola oil
  • 1 lb Lean ground Québec Pork
  • 1/4 tsp Ground cayenne pepper
  • 1 tsp Ground coriander seeds
  • 2 tsp. Dijon mustard
  • 1 egg
  • 1/2 cup Crumbled dried bread crumbs
  • Salt and freshly ground pepper to taste
  • 4 Pita or Kaiser breads
  • 8 Lettuce leaves

PREPARATION

  1. Heat the oil in a small skillet over medium-high heat and sauté the onion for 2 to 3 min. Let cool.
  2. In a bowl, combine cooked onion, ground pork, cayenne pepper, ground coriander, Dijon mustard, egg and bread crumbs. Refrigerate for 2 h.
  3. Combine all salsa ingredients in a bowl. Cover and set aside.
  4. Shape meat into 8 patties, 1 cm (1/2") thick. Grill under the broiler (keep oven ajar) or in a grill pan over medium-high heat for 8 to 10 min. Turn once halfway through cooking and season with salt.
  5. Cut pita bread in half and open each half to form pockets. Garnish pockets with pork patty, lettuce leaves and salsa.

VARIATION

For a different flavor, add 5 ml (1 tsp.) ground cumin and 2 ml (1/2 tsp.) ground cinnamon to the ground pork mixture.

SERVING SUGGESTION

Serve with raw vegetables such as bell pepper strips, broccoli florets and cucumber slices.
