CAKE AU BACON

- 3 eggs
- 125 ml (½ cup) milk
- 375 ml (1 ½ cups) flour
- 15 ml (1 tablespoon) baking powder (baking powder)
- 125 ml (½ cup) butter, melted
- 250 ml (1 cup) mozzarella, grated
- ½ bunch chives, chopped
- 8 slices bacon, cooked crisp, chopped Salt and pepper to taste
- Preheat oven, rack in center, to 190°C (375°F).
- Whisk eggs and milk in a bowl. Stir in flour, baking powder and a pinch of salt.
- Add the melted butter, mozzarella, bacon and chives.
- Pour the mixture into a cake tin lined with butter and flour, and bake for 20-25 minutes. Let cool before unmolding.
