BEEF CARPACCIO WITH BASIL OIL

Ingredients
- 300 g (10 oz) beef tenderloin, thinly sliced
- 12 Parmesan shavings
- 90 ml (6 tablespoons) olive oil
- 8 basil leaves, chopped
- 60 ml (4 tbsp) black olives, chopped
- 60 ml (4 tbsp) white balsamic vinegar
- 8 cherry tomatoes, quartered
- ¼ red onion, thinly sliced
- 250 ml (1 cup) arugula
- salt and freshly ground pepper to taste
Preparation
- On each plate, divide and arrange the beef slices, add the cherry tomatoes and olives,
- onion slices, arugula and Parmesan shavings.
- In a bowl, mix the oil, vinegar, chopped basil, salt and pepper. Check seasoning.
- Pour the prepared vinaigrette over the entire plate and add a little salt and pepper.
