Beef carpaccio with basil oil

BEEF CARPACCIO WITH BASIL OIL

Portions : 4 - Preparation time : 10 minutes

Ingredients

  • 300 g (10 oz) beef tenderloin, thinly sliced
  • 12 Parmesan shavings
  • 90 ml (6 tablespoons) olive oil
  • 8 basil leaves, chopped
  • 60 ml (4 tbsp) black olives, chopped
  • 60 ml (4 tbsp) white balsamic vinegar
  • 8 cherry tomatoes, quartered
  • ¼ red onion, thinly sliced
  • 250 ml (1 cup) arugula
  • salt and freshly ground pepper to taste

Preparation

  1. On each plate, divide and arrange the beef slices, add the cherry tomatoes and olives,
  2. onion slices, arugula and Parmesan shavings.
  3. In a bowl, mix the oil, vinegar, chopped basil, salt and pepper. Check seasoning.
  4. Pour the prepared vinaigrette over the entire plate and add a little salt and pepper.
