Tofu and seitan bacon club sandwich

Ingredients

Seitan bacon

  • 45 ml (3 tablespoons) soy sauce
  • 30 ml (2 tbsp.) maple syrup
  • 15 ml (1 tablespoon) liquid smoke
  • 5 ml (1 tsp.) onion powder
  • 8 to 12 slices Seitan
  • Salt and pepper to taste

Tofu

  • 30 ml (2 tbsp.) maple syrup
  • 5 ml (1 tsp.) herbes de Provence blend
  • 60 ml (4 tbsp.) olive oil
  • 15 ml (1 tbsp.) Worcestershire sauce
  • 1 garlic clove, minced
  • 8 slices firm tofu

Topping

  • Bread slices
  • Vegan or regular mayonnaise
  • Tomato slices
  • Salad slices

Preparation

  • Preheat oven, rack in center, to 190°C (375°F).
  • In a bowl, combine soy sauce, maple syrup, liquid smoke and onion powder.
  • Coat Seitan slices with prepared mixture.
  • On an ovenproof baking sheet lined with a silicone mat, spread the seitan bacon slices and bake for 10 to 12 minutes.
  • Meanwhile, in a bowl, combine the maple syrup, herbes de Provence, olive oil, Worcestershire sauce and garlic.
  • Coat the tofu slices with the mixture.
  • In a hot skillet, toast tofu slices, 2 to 3 minutes per side.
  • Assemble sandwiches with tofu, seitan bacon and toppings.
