Ingredients
Crepe batter
- 2 eggs
- 250 ml (1 cup) milk
- 90 ml (6 tbsp) melted unsalted butter
- 1 pinch of salt
- 15 ml (1 tbsp) vanilla extract
- 190 ml (3/4 cup) flour
Filling
- 2 eggs, whites
- 250 ml (1 cup) mascarpone
- 90 ml (6 tbsp) maple syrup or honey
- 1 pinch of salt
- 1 orange, zest
- 60 ml (4 tbsp) Nutella
- 2 oranges, sliced
Preparation
- In a bowl, using a hand mixer or whisk, mix the eggs, milk, butter, salt and vanilla.
- Incorporate the flour. Depending on the flour, adjust the volume of milk to obtain a homogeneous, smooth and fluid preparation.
- In a hot crepe pan, greased with butter or sprinkled with a small amount of Mycryo butter, using a ladle, pour the right amount of crepe batter, to make small thin crepes.
- Cook each crepe, 20 to 30 seconds on each side. Repeat this for each crepe.
- Using a hand mixer, beat the egg whites until stiff.
- In a bowl, mix the mascarpone, maple syrup, salt and orange zest.
- Using a spatula, gradually incorporate the egg whites into the prepared mixture by turning.
- On each crepe, spread the Nutella, distribute the prepared cream and close the crepe into a cone.
- Serve, accompanied by the orange segments.
