Ingredients
- 2 cans tuna in oil, drained
- 250 ml (1 cup) mashed potatoes
- 60 ml (4 tbsp) parsley leaves, chopped
- 15 ml (1 tbsp) plain Greek yogurt
- 1 clove garlic, minced
- 60 ml (4 tbsp) candied tomatoes, chopped
- 1 egg
- 250 ml (1 cup) breadcrumbs
- 125 ml (1/2 cup) canola oil
- Salt and pepper to taste
Mayonnaise
- 120 ml (8 tbsp) homemade or store-bought mayonnaise
- 30 ml (2 tbsp) capers, chopped
- 1 lemon, zest
- Tabasco to taste
Preparation
- In a bowl, mix the tuna, mashed potatoes, parsley leaves, tomatoes garlic, parsley, yogurt, egg, salt and pepper. Check the seasoning.
- With your hands, form the prepared mixture into balls that you then roll in the breadcrumbs.
- On the work surface, lightly crush each ball to make a thick disk.
- In a hot pan, brown the croquettes in the canola oil, until they are golden brown on each side.
- In the meantime, prepare the mayonnaise, in a bowl containing the mayonnaise, using a whisk, incorporate the capers and lemon zest.
- Serve with the mayonnaise.
