Tuna and mayonnaise croquette

Ingredients

  • 2 cans tuna in oil, drained
  • 250 ml (1 cup) mashed potatoes
  • 60 ml (4 tbsp) parsley leaves, chopped
  • 15 ml (1 tbsp) plain Greek yogurt
  • 1 clove garlic, minced
  • 60 ml (4 tbsp) candied tomatoes, chopped
  • 1 egg
  • 250 ml (1 cup) breadcrumbs
  • 125 ml (1/2 cup) canola oil
  • Salt and pepper to taste

Mayonnaise

  • 120 ml (8 tbsp) homemade or store-bought mayonnaise
  • 30 ml (2 tbsp) capers, chopped
  • 1 lemon, zest
  • Tabasco to taste

Preparation

  1. In a bowl, mix the tuna, mashed potatoes, parsley leaves, tomatoes garlic, parsley, yogurt, egg, salt and pepper. Check the seasoning.
  2. With your hands, form the prepared mixture into balls that you then roll in the breadcrumbs.
  3. On the work surface, lightly crush each ball to make a thick disk.
  4. In a hot pan, brown the croquettes in the canola oil, until they are golden brown on each side.
  5. In the meantime, prepare the mayonnaise, in a bowl containing the mayonnaise, using a whisk, incorporate the capers and lemon zest.
  6. Serve with the mayonnaise.
