Cod croquettes, roasted peppers and garlic

Ingredients

  • 250 gr cod
  • 250 ml (1 cup) milk
  • 250 ml (1 cup) roasted peppers (jar or can)
  • 4 cloves garlic, chopped
  • 250 ml (1 cup) feta, chopped
  • 1 shallot, finely chopped
  • 2 eggs
  • 500 ml (2 cups) breadcrumbs, as needed
  • Salt and pepper to taste

Breadcrumbs

  • 250 ml (1 cup) flour
  • 2 eggs, beaten
  • 250 ml (1 cup) panko breadcrumbs

Preparation

  1. In a saucepan of boiling water, add the milk and cod and cook for 5 minutes.
  2. Remove and drain the cod.
  3. Finely chop the roasted peppers.
  4. In a bowl, crumble the cod, add the pepper, garlic, feta, shallot, eggs, salt and pepper.
  5. Adjust the texture of the mixture, with more or less breadcrumbs, if necessary.
  6. Form croquettes the size of a golf ball, flatten them slightly, roll them in the flour, then in the egg and finally in the panko breadcrumbs.
  7. In a hot pan, over medium heat, sear the croquettes in a little cooking oil, 2 to 3 minutes on each side.
  8. Serve the croquettes, accompanied by a green salad.
