Ingredients
- 680 g ready-to-use mashed potatoes
- 200 g shredded chicken (leftover roast or cooked chicken)
- 2 eggs
- 125 ml (1/2 cup) grated Parmesan cheese
- 60 ml (1/4 cup) chopped fresh parsley
- 60 ml (1/4 cup) chopped fresh chives
- 125 ml (1/2 cup) breadcrumbs in the mixture
- 125 ml (1/2 cup) panko breadcrumbs (for coating the croquettes)
- Salt, pepper
- 250 ml (1 cup) oil for frying
Preparation
- In a large bowl, combine the mashed potatoes, shredded chicken, eggs, grated Parmesan cheese, parsley, chives and 125 ml of breadcrumbs. Season with salt and pepper.
- Shape the mixture into small balls or patties. Roll each croquette in the panko breadcrumbs to coat.
- In a hot skillet over medium heat, add 1 cup of oil and fry the croquettes for about 3 to 4 minutes per side, until golden brown and crispy on the outside.
- Transfer the croquettes to paper towels to remove excess oil.
