Mashed Potato Croquettes with Shredded Chicken, Parmesan and Panko

Croquettes de Purée de Pommes de Terre au Poulet Effiloché, Parmesan et Panko

Ingredients

  • 680 g ready-to-use mashed potatoes
  • 200 g shredded chicken (leftover roast or cooked chicken)
  • 2 eggs
  • 125 ml (1/2 cup) grated Parmesan cheese
  • 60 ml (1/4 cup) chopped fresh parsley
  • 60 ml (1/4 cup) chopped fresh chives
  • 125 ml (1/2 cup) breadcrumbs in the mixture
  • 125 ml (1/2 cup) panko breadcrumbs (for coating the croquettes)
  • Salt, pepper
  • 250 ml (1 cup) oil for frying

Preparation

  1. In a large bowl, combine the mashed potatoes, shredded chicken, eggs, grated Parmesan cheese, parsley, chives and 125 ml of breadcrumbs. Season with salt and pepper.
  2. Shape the mixture into small balls or patties. Roll each croquette in the panko breadcrumbs to coat.
  3. In a hot skillet over medium heat, add 1 cup of oil and fry the croquettes for about 3 to 4 minutes per side, until golden brown and crispy on the outside.
  4. Transfer the croquettes to paper towels to remove excess oil.
