Gratin of Salmon and Mashed Potatoes with Roasted Broccoli

Gratin de Saumon et Purée de Pommes de Terre au Brocoli Rôti

Serves : 4

Ingredients

  • 300 g fresh salmon, cut into pieces
  • 680 g ready-to-use mashed potatoes
  • 500 ml (2 cups) broccoli, cut into small florets
  • 1 onion, chopped
  • 15 ml (1 tbsp.) butter
  • 250 ml (1 cup) grated Gruyère cheese
  • 15 ml (1 tbsp.) olive oil
  • salt and pepper

Preparation

  1. Preheat oven to 200°C.
  2. Arrange broccoli florets on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 20 minutes, turning halfway through cooking, until lightly browned.
  3. Meanwhile, in a hot frying pan over medium heat, melt the butter. Add the chopped onion and sauté for about 5 minutes, until translucent. Add the salmon pieces and cook quickly for 3-4 minutes, until golden brown. Season with salt and pepper.
  4. Arrange the roasted broccoli and salmon pieces in a gratin dish. Top with the ready-to-use mashed potatoes, then sprinkle with grated Gruyère.
  5. Bake at 180°C for 20 minutes, until golden brown and slightly crisp on top.
